These are like traditional granola bars, only MUCH healthier and with added protein!  Kids and adults will both love these!  Perfect to have around for camping, hiking and great for on the go!

Trail Mix Protein Granola Bars

Train Mix Protein Granola Bars

Makes 12 bars

1 cup rolled oats (old fashioned)
3 x 30 gram scoops of whey protein (vanilla or plain)
80 grams (1/2 cup) trail mix, chopped *NOTE
1/2 cup natural peanut butter
1/4 cup agave syrup (or honey, or maple syrup)
1/4 cup water

*NOTE: I used Back to Nature brand that was a mix of pumpkin seeds, apricots, raisins, pecans & almonds.  Depending on the brand and mix you use, nutritional may change.

Preheat oven to 325 degrees F.  Line cookie sheet with parchment paper.  If needed, slightly melt peanut butter to make a runnier consistency, but not hot (in microwave for 20 seconds).  Place all ingredients in a large bowl and mix together with hands until blended.  Press onto cookie sheet lined with parchment in the shape of a large rectangle, covering the surface of the pan.  It will be sticky, so a rubber spatula & hands work the best.  You’ll want it to be a thinner layer.

Bake for 10 minutes, then remove from oven, cut into 12 bars, separate them a bit so they aren’t touching, then return to oven and bake for another 12-14 minutes until they are golden brown.  Allow to cool on a rack.  They will get crunchy as they cool.  Store in an airtight container at room temperature.  Can also be frozen to prolong shelf life.
